Here are plugins that I consider to be the best general plugins to use on your blog.  They are good for both business and personal blogs and are simple to install.

Akismet - this plugin helps stop spammers from spamming your blog.  It is VERY useful.  You can know at a glance whether a post is spam or not.

NextGen Gallery - this one is neat.  It lets you build an image gallery and slide show into your blog.  It's really easy to use and works great.

Buddy Press - this one lets you build a whole social networking site into your blog.  For example, if you want a social network just for your business, youth sports team or church, you can have one with just a few clicks of your mouse.  This is really a super plugin.

Fast Secure Contact Form - this is a highly rated contact form that lets your blog users email you via a form on your blog but it's set up to keep the automated spammers out. 

Add to Any - this one lets you post an easy way for people to share and bookmark your blog posts.  It's really neat and works with every service such as Twitter, Facebook, Digg, Delicious, Google Buzz and others.
